Now I can’t remember exactly why I picked up this Dragonfly Moroccan Mint Organic Green Tea (I’m not usually a fan of green tea), but boy am I glad I did. When the weather perked up this past bank holiday weekend, and I wanted a sweet drink to enjoy on the patio, this made the perfect iced tea. I made up a jug, popped it in the fridge, and served an hour later, topped up in the glass with some sparkling water. I might previously have been tempted to add some elderflower cordial to sweeten it, but the tea itself has such natural sweetness from the mint that nothing else was needed. A definite must for a hot summers’ day I think, as well as providing the opportunity to use our growing mint plant to add a garnish!
To accompany this refreshing beverage, I happen to have whipped up some chocolate cupcakes with rosewater frosting. I mixed the recipes up, and am glad I did. The coffee in the chocolate cupcakes gave them a rich flavour, which contrasted nicely with the smooth floral rosewater frosting. I often mix and match cake and frosting recipes, which is sometimes a disaster – but in this case was a resounding success!
So all that was left then was to enjoy it, sitting out in the early evening sun on the patio. We’ve recently bought a place, and are so excited to have a reasonable sized garden to make our own and enjoy. The first port of call for us was garden furniture, which we picked up in a very exciting trip to Ikea. We have a lot to do in the house, and given I’m now 41 weeks pregnant we probably had other priorities – but when I sat outside relaxing in the new chairs, sipping my iced tea and enjoying my cupcake, I knew everything else could wait!
